About this dish
Vindaloo is the curry that stops conversation. Originally Portuguese-influenced (vinha d'alhos = wine and garlic), Goan vindaloo became one of the spiciest curries in India: kashmiri chilis, vinegar, garlic, mustard seed. Our version is bold, tangy, and properly hot — the way it's meant to be.
How we make it
We toast and grind the spices fresh, marinate the meat in vinegar and chili paste overnight, then slow-cook with potatoes (a Brit-Indian addition) until everything melts together. We don't water it down. If you want mild vindaloo, get something else.
