"Vegetable curry" isn't vegan Indian food. Chana Masala, Aloo Gobi, Dal Tadka, Baigan Bharta, Palak Tofu — these are dishes designed from the ground up as vegetable-centered, with their own spice profiles and traditions. That's what authentic vegan Indian looks like.
Traditional Indian cooking uses ghee (clarified butter) and cream extensively. Restaurants that don't pay attention will use ghee in nominally vegan dishes. We use oil and coconut cream for our vegan dishes — always — and tell our servers to confirm this with diners who ask.
Many vegan menus in Denver use the same gravy base across multiple dishes. Real vegan Indian cooking layers spices distinctly for each dish — chana masala is dry-spiced with amchur (dried mango), dal is tempered with mustard seed and curry leaf, palak is finished with fenugreek leaves.
