Naan dough is enriched with yogurt and a little oil, given time to ferment, then hand-stretched — never rolled with a pin, which kills the air bubbles that give naan its texture. The stretched dough is slapped directly onto the inner wall of a tandoor, a clay oven running well over 800°F. It cooks in under 90 seconds: the side against the clay chars and blisters, the top puffs with steam pockets, and the whole thing comes out slightly smoky, chewy at the edge, and soft in the middle.

Frozen naan can't replicate any of that. It's rolled flat by machine, par-baked, frozen, shipped, and reheated in a conventional oven — no char, no blister, no tandoor smoke. It's bread. Real naan is something else.
